Every tea in the Within collection is sourced directly from producers in China and Taiwan who share our commitment to quality and craft. We prioritise teas from producers who work with traditional methods, often in small batches. Origin and traceability matter to us — we will always tell you where a tea comes from and how it was made.

We work with producers who farm responsibly and, where possible, without synthetic pesticides. Many of our teas come from high-altitude regions where conventional pesticide use is minimal by nature of the environment. We are currently building out our full transparency documentation and will share this alongside each product.

GABA oolong is processed through an anaerobic fermentation — the tea leaves are kept in nitrogen-rich, oxygen-free conditions during oxidation. This naturally elevates the gamma-aminobutyric acid (GABA) content. The effect is a tea that is notably smoother and, for many people, has a calming quality that regular oolong does not. The flavour profile also shifts — rounder, with a distinct sweetness and depth.

Each tea has its own rhythm. We recommend brewing most teas gongfu style — small vessel, multiple short infusions — as it gives you more control and reveals how a tea evolves over successive steeps. That said, every tea in the collection can also be brewed simply in a mug or a teapot. Temperature and steep time guidance is included with each product.

Gatherings are at the heart of what we do. They are intimate, curated events — usually small — built around tea, conversation, music, and shared presence. No agenda, no pitch.
